Some mornings, I want a breakfast that's quick, satisfying, and doesn't require much effort. Avocado toast on sourdough with a fried egg is one of my go-to options.

But one thing I've learned is that having the right groceries on hand makes busy weeks so much easier. I'm always looking for foods I can use in different ways and keep fresh for as long as possible, so I'm not constantly running to the store.

My Grocery Tip: Keep Sourdough Bread and Avocados on Hand

Sourdough bread

A loaf of sourdough is one of my favorite things to buy because I can use it for avocado toast, eggs and toast, or a quick slice with butter. If I'm not going to finish the loaf right away, I keep it in the fridge to help it stay fresh longer. You can also freeze slices and toast them straight from frozen.

Avocados

Avocados are another grocery staple I like to keep around. If I buy them ripe or nearly ripe and don't plan to use them immediately, I put them in the fridge to slow down ripening and help them last longer. That way, I can make avocado toast when I want it instead of feeling like I have to use every avocado right away.

These small grocery habits help me get more use out of what I buy and make it easier to pull together a quick breakfast during the week.

Ingredients

  • 1 slice sourdough bread

  • ½ ripe avocado

  • 1 egg

  • 1 teaspoon olive oil or butter

  • Salt and black pepper, to taste

  • Red pepper flakes (optional)

Instructions

  1. Toast the sourdough

Most mornings, I keep it simple and pop my sourdough in the toaster until it's golden and crispy. But when I'm craving something extra delicious, I heat a little olive oil in a skillet over medium heat and griddle the bread on both sides until it's golden brown and crispy. It gives the sourdough a delicious, savory crunch! Both options work great, so choose whichever fits your morning.

My tip: Use just enough olive oil to lightly coat the pan. That way, the bread gets crispy without becoming too greasy.

  2. Add the avocado

Slice your ripe avocado and layer it over your toasted sourdough. You can mash it if that's what you prefer, but I personally love slicing mine.

Then sprinkle everything bagel seasoning over the top. It's an easy way to add extra flavor and makes the avocado toast even better without needing a bunch of ingredients.

  3. Cook your egg and add your toppings

Cook an egg however you like. Some days I go for a fried egg, and other days I make soft scrambled eggs.

Add the egg to your avocado toast, then finish with flaky salt, red pepper flakes, or whatever toppings you're in the mood for.

And that's it! An easy, delicious breakfast with very little effort.
